Christmas Morning Muffins

It is tempting to go all out with breakfast on Christmas morning (Christmas is for eating, right?) – pastries, croissants, ham, smoked salmon, cheese, fruit, champers! But what about for those with an appetite for something lighter and for those staying away from dairy, egg, gluten and prefer to be sugar free?

These cute little muffins are special in every way and are perfect as a lighter option and for those with dietary restrictions.  They are #EdenFriendly, made with wholesome quinoa flour and almond meal, fresh fruit and essential oils for flavour.  What’s more, if you measure out the dry ingredients the night before and put the muffin cases in the muffin tin, you don’t need to do anything more labour-intensive on Christmas morning itself, other than preheat your oven, whisk up the wet ingredients and mix them all together!

These healthy Christmas morning alternatives are naturally sweet, cinnamony and orange-scented, perfect for Christmas to make your kitchen ooze with festive flavours and you can use fancy, christmassy muffin cases and even decorate the tops!

Here is the recipe and how to:

Makes 12 Muffins

1 cup quinoa flour

1 cup almond meal

3 tbsp arrowroot

1tsp baking powder

1/2 tsp baking soda

1/4 tsp himalayan salt

1 sachet of any fruity baby food (I use one that is mainly apples)

1/4 coconut oil (melt to liquid)

1tsp pure vanilla extract

Orgran Egg Replacer (to replace 2 eggs)

1 drop 100% pure CPTG Cinnamon Essential Oil

1 drop 100% pure CPTG Wild Orange Essential Oil

Up to a cup of rice milk or other dairy free alternative

1 cup mix of fresh blueberries and chopped strawberries (make sure ripe and succulent!)

Preheat the oven to 400 deg F (200 deg C).  Lightly grease a 12-cup muffin pan or line with your christmassy muffin paper cups.

Mix up all your dry ingredients in one bowl.

Mix up all of your wet ingredients, apart from the milk, in another bowl until smooth.

Make a well in your dry ingredients and stir in the wet ingredients.  Add milk a little at a time until you have a batter.

Fold in your blueberries and strawberries until just blended.

Divide among your muffin cups and bake for between 15 and 30 minutes until golden and can insert a toothpick into the centre to come out clean.

Transfer to a rack to cool.
