Goodness of a Smoothie and Super Power of Quinoa… In a Muffin!

I have adapted this recipe from PopSugar to make it #Edenfriendly, but also so that I can enjoy it. I have been following a diet and exercise programme that requires you to eat 6 small meals/snacks a day and is basically based on clean eating principles 😊 It is called TERRAfit and I am getting some great results! ‘Anywho’, these muffins are quick and easy to make 😊 The result of a smoothie mixture with the light quinoa flour is the lightest, fluffiest, tastiest muffins I have made in a while! And they make your kitchen smell like strawberry shortcake 😊

Take 3 ripe bananas, 8 strawberries and 2 packed cups of spinach and blend up



In a seperate bowl mix 1.5 cups of quinoa flour, 2 tsp orgran egg replacer, 1 tsp cinnamon, 1/8 tsp pink Himalayan salt, 1 tsp baking soda, 1/4 cup coco oil, 3/4 cup coco sugar and 2 tbsp water



Next add in your smoothie mixture and stir up together


I finished the mix off with a scoop of nuzest strawberry protein powder and then put in the oven preheated to 176 for just over half an hour!
