Yummy, fudgy, sticky pumpkin protein choc brownies

If you are looking for a brownie that has a hit of veggie AND protein, is refined sugar free, full of energy and tastes GOOD, this is the recipe!

I would describe these dollops of delights as fudgy, sticky, satisfying and rich.  Have a go at making them yourself:

  • Just over cup cooked pumpkin
  • 11 dates
  • 2tsp cinnamon
  • 1 tsp fresh ginger grated
  • 1/4 cup natural peanut butter
  • Just over 2 cups of almond meal
  • 1 cup choc protein powder
  • 1/4 cup coco oil, melted with 3 tbsp cacao mixed in

INSTRUCTIONS

  1. Pre-heat oven to 180c / 350f / gas 4 and line a 21cm x 21cm (8.5inch x 8.5inch) baking tin
  2. In a blender / food processor blitz the pumpkin and dates together to form a puree. Add the peanut butter and spices and mix until combined
  3. Add the almond meal, protein powder and coco oil/cacao mix into a large mixing bowl then add the puree and combine
  4. Pour the mixture into the baking dish and flatten
  5. Bake for 20-25 mins
